Since I started Kayla Itsines 12 week bikini body plan I am doomed to healthy food. Which means, no sugar, no junk food and NO alcohol. So my favorite glass of wine each day is no more. Lost, gone, and I sincerely miss it.
So I have to be a little creative since I am not a big fan of feeling like a rabbit eating only vegetables.
Luckily she has a lot of inspirational and yummy pictures with good food. So I started experimenting on quinoa yesterday. Seems to be one of the most healthy things lately so I thought, I will give it a shot!
And it worked out pretty well as I may say so.
I like to dress up my plate so it maybe looks difficult, but it isn’t.
What do we need:
Small tomatoes (You can pick your favorite)
Red pepper (or a yellow, orange or green one)
Green asparagus tips
A small amount of japanese mayonaise, soy sauce and a little bit of olive oil and lemon juice
A ring mold to build up the little tower 🙂 Find one here: http://www.kookwinkel.nl/webshop/40586-kookringen.asp
How do we make it:
Preheat oven up to 200 degrees
Put all the vegetables on the oven plate and sprinkle a little salt and olive oil on them.
Put them in the oven under the grill until ready. Meanwhile cook the quinoa 8 minutes, once finished put in some lemon juice and mix it all together.
Cut the avocado in small cubes and put them in the mold, on top of the avocado you put the salmon and finish with the quinoa. Sprinkle some soy sauce on top of it, but be careful with the amount otherwise it will be too salt. Take out the grilled veggies and put the tomatoes on top of the quinoa with the asparagus. Roll up the zucchini and place it next to the peppers on your plate (you can make it as pretty as you like of course)
Finish it with a little japanese mayonaise and sesame seeds.
