So here it is! Pancakes are definitely my guilty pleasure. And I loooooove them for breakfast. Plain with dutch syrup, the American way with ahorn/corn syrup and butter or in case I want to have them a little bit more healthy, banana pancakes! And since it looks like everybody is all on a health mission, these banana pancakes are taking over! Though I prefer the original not-so-healthy version. So, to make them more tasty I started to try all sorts of ingredients. Here is the base (this gives you 3 small sized pancakes, perfect for one)
1 tbs flower
1 small hand of oats
And that’s it.
Make sure your bananas are ripe, because you have to squash them. Once you’ve done that, mix them with the eggs, flower and oats. Blend it al together till everything is mixed and leave it for about 10 minutes. This allows the oats to soften, you don’t want any hard lumbs in your pancakes. That’s it! And now just bake them like you do with every pancake. I added the flower and oats because I don’t like banana ‘pancakes’ if they just taste like a sweet omelet and it gives them that extra bite. Plus, it gives you more energy to get through the morning.
And now for the topping!! Just throw everything you like on top of it. I usually take cinnamon, red fruit, non-fat greek yoghurt and a tiny bit of honey. But in this case I had mango, red fruit and honey. But you can also have a chocolate variant by using some cacao in the recipe. Sprinkle with some cacao nibs, coconut and fruit. Everything is possible. It sure looks good and even tastes better!
